The name "Med Eggs" is inspired by the prominent Mediterranean flavours in this dish: the Southern European tastes of tomato and basil and those of the Middle East in the Dukkah and Pita Bread but there is also a little something else to it. You can't forget the importance of the secret ingredient and who's to thank for it being there.

Australia is perhaps the best in the World at all day breakfasts. Nearly every café you go to or walk past in any State in Australia will have a full breakfast menu boasting eggs done every which way you can imagine with a whole array of extras and sides to have with them. What you notice while sampling some of the best breakfasts around town is that avocado seems to be popping up really rather often. “Avocado? With eggs?” You ask yourself. Well, in the words of Meg Ryan in one of the best Rom Coms of all time, yes yes yes yes YES! Thank you Australia for the delight which is avocado with eggs. Try it. You are challenged not to like it.

So Med Eggs takes the simple combination of eggs, tomatoes and avocado and adds the toasty crispiness of the pita bread, the smoky taste of the Dukkah, the bite of the spring onions and the freshness of basil to make it just that extra bit special and ensure you a brunch dish that is different from the rest.
